*Chicken Biriyani

Serve with delight this mouth-watering chicken cooked in herbs and spices with fragrant rice and nuts.

Ingredients:

250 gms- Basmathi rice.
500 gms- Chicken boneless, cut into pieces.
2 medium Onions(sliced)
1 tbsp Ginger paste.
1 tbsp Garlic paste.
2 cups of Water.
3 medium Tomatoes (puree)
Salt and black pepper powder (to taste)
1/4 tsp turmeric powder.(haldi)
1 tsp cumin seed.
1 tsp Garam masala.
4 Cloves.
2 Cinnamon Sticks.
2 Bay leaves(tej patta)
black cinnamon(big elachi)
2-3 peppercorns(kali mirchi)
2 tbsp Oil/ghee
2 tbsp Almonds and Cashewnuts.
1tbsp Raisins
8-10 Strands of Saffron.

Method.
  • Wash and soak rice for 1/2 an hour in 2 cups of water. Drain the water.
  • Add salt and 1 tbsp oill/ghee to the soaked rice. Boil covered at 100% power for 9-10 mins. and then at 60% power for 5-6 mins. in microwave safe bowl. Allow to stand, covered for 5 mins.
  • In another microwave safe bowl heat oil at 100% power for 30 secs. Add sliced Onions, cumin seeds, salt, turmeric powder, clove, cumin, black cardamom, bay leaves, pepper corns, tomato puree and ginger-garlic paste. Microwave(covered)at 100% power for 5-6 mins. Add chicken pieces and microwave(covered) at 80% power for 5-6 mins. Strir in between.
  • Add rice and arrange in layers microwave for another 3 mins. at 60% power. Sprinkle garam masala. Allow to stand for 10 mins. Garnish with fried nuts, raisins, saffron and chopped coriander and serve hot.

* Basmathi Rice

Yield: 9 cups
Pressure cooking Time 3 Minutes

Ingredients:
3 cups water
11/2 teaspoon Salt
3 Cups Basmathi Rice

Method:
  • Recipie can be reduced to one third by reducing all ingredients proportionately
  • Pour water into cooker. Bring to boil on high heat. Add salt and rice. Stir.
  • Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes.
  • Remove cooker from heat. Allow to cool naturally for 5 minutes. Press finger-tip control lightly to release pressure.
  • Open cooker. Fluff up rice gently with a fork to separate grains.

*Bread Rolls

The favourite tea time snack in its crunchy and yet oil free version. Simply yummy..!!
Serves: 4
Calories: 135.
Cooking time: 8 mins(micro)
15 mins (grill)
Ingredients:
  • 4 Bread slices.
  • For fillings:
  • 2oo gms boiled Potatoes.
  • 2 green Chillies(chopped)
  • 2 tbsp Coriander(chopped)
  • ½ tsp Chat Masala powder.
  • ¼ tsp Garam masala powder.
  • ½ tsp Red chilli powder.
  • Salt and black pepper to taste
  • 1 tsp Oil

Method:

  • Wash and prick the potatoes with a fork. Place them in a microwave safe bowl in 1 cup of water and boil covered at 100% power for 8 mins. Allow to stand 5 min. Peel and mash them.
  • Mix all the ingredients(except oil) for the filling and keep aside.
  • Take the bread slices one by one and soak them in water. Squeeze and drain extra water. Fill in the prepared potato mixture and shape into cylindrical rolls.
  • Brush with oil and grill on the greased non stick tawa or microwave safe flat dish at high rack for 15-20 mins. Turn in between for uniform browning from all the sides.
  • Serve hot with green chutney or sonth.

* Coconut Burfi

The south Indian version of the popular burfi: Relish the unique taste of sweet squares made from fresh coconut in milk.

Serves:- 15-20 Pieces.
Calories: 200 cal/piece.
Cooking Time: 21 mins.

Ingredients:

  • 2 Cups Fresh grated coconut.
  • 1 Cup Dried whole milk(Grated Khoya)
  • 1 tbsp Ghee
  • 1 Cup Sugar
  • 2 Cups Milk
  • 1sp Cardamom powder.
  • 1 Silver leaf to garnish.

Method:

  • In a microwave safe bowl, combine grated coconut, sugar, cardamom powder and milk and microwave at 60% power for 10 mins. Or till the mixture is thick
  • Add grated dried whole milkto it and microwave at 60% power for 5 mins. Stir it occasionally.
  • Add 1 tbsp ghee to the mixture and mix it.
  • Grease a thali with little ghee and spread the mixture on it. Garnish with a silver leaf.
  • Cool it and cut into desired shapes.

I read about this new carrot in an article.

Scientists in US say they have created a genetically-engineered carrot that provides extra calcium. They hope that adding vegetable to a normal diet could help ward off conditions such as brittle bone dissease and osteoprosis. Someone eating the new carrot absorbs 41 percent more calcium than if they ate the old, the proceedings of the National Academy of Science study suggests. The calcium charged vegetable still needs to go through many safety trials. " These carrots were grown in carefully monitored and controlled enviroinments,",said Professor Kendal Hirschi of Babylor College of Medicine, Texas.
